I made my first casserole today. Is baked Ziti really a casserole? Even if I make it with Penne instead of Ziti? Well it certainly tastes good, regardless. And was great in the beginning of my 2nd class when I could feel creeping into my system the cranky hostility that comes with lack of food in my tummy….

Baked Ziti

 

Ingredients

  1. 15 oz. Ricotta cheese, Cottage Cheese or combo
  2. 2 eggs, beaten
  3. 1/4 c grated parmesan cheese
  4. 1/4 ts black pepper
  5. 1 bunch fresh parsley, chopped, or 4 tbsp dried parsley
  6. 16 oz. penne pasta
  7. 24 oz. tomato sauce
  8. 8 oz. shredded mozzarella

Directions

  1. Preheat oven to 350F
  2. In a large bowl, combine ricotta cheese, eggs, Parmesan cheese and seasonings
  3. In a large bowl, combine ricotta cheese, eggs, garlic, parsley, and nutmeg, parmesan cheese and seasonings
  4. In another bowl, combine cooked pasta and sauce, mix thoroughly
  5. Place in 2 qt. greased caserole dish and sprinkle with any remaining mozzarella and parmesan cheese
